KID'S WHITE CUPCAKES 
The reason these cupcakes are called what they are is because any kid can make them (and they are white). We had the most fun decorating them for whatever holiday just happened to be close at the time.

3/4 c. sifted flour
1/2 c. sugar
2 tbsp. and 2 tsp. shortening
1/2 tsp. salt
2 tbsp. and 2 tsp. milk
1 1/2 tsp. baking powder
1 1/2 egg whites
1/2 tsp. vanilla
2 tbsp. and 2 tsp. milk

Measure into mixing bowl flour, sugar, shortening, salt, milk and baking powder, mixing thoroughly for 2 minutes. Add and mix thoroughly for 2 minutes whites, vanilla and milk. Pour into cupcake pans lined with cupcake paper liners. Bake at 350 degrees for 15 to 20 minutes. I am not sure how many it makes, my sisters and I always doubled this recipe.

Not white, more yellow look but absolutely delicious. I only like cupcakes for the frosting but these I ate plain and was quite impressed. Now I need to find a frosting I like that I can make and I'll be in great shape....thanks for the delightful recipe.

I would have rated it a 5 but it makes so little. Another thing which would make it better is add lemon zest and lemon juice. I did that and it tasted awesome.
