FRESH KIWI PIE 
12 med. kiwis, peeled
1 c. water
3 tbsp. cornstarch
1 c. sugar
Pinch of salt
1 tbsp. lemon juice
1 tsp. butter
1-2 drops green food coloring
9-inch baked pie shell

Cut 9 kiwis in half and blot with paper towel. Blend the remaining 3 kiwis with water in blender or processor. In a saucepan, combine blended kiwi mixture with cornstarch, sugar and salt. Cook until thickened. Remove from heat and add butter and food coloring. Arrange halved kiwis in pie shell. Pour glaze over kiwis, coating them well. Chill for several hours. Serve with whipped cream, if desired.

The pie recipe is quite good, I used the lemon juice in the blender with the kiwis and water. I would recommend slicing the 9 kiwi's so that they are round with the seed in a circle, also that way makes it much more easier to arrange inside the pie crust. For the pie make sure the side are tall if your cooking it from scratch. And as for knowing if the mixture has thickened enough, it is usually good when you stir it and it kinda reverse it self (about 5 minute should be fine).

I don't like raw kiwis, but this pie was really good. My roommate bought a big bag of Costco kiwis and never ate them. Glad I used a deep dish pie crust. More liquid than I expected. I am now a kiwi fan.
