CHEWY OATMEAL RAISIN BARS 
1/4 lb. butter
1 c. light brown sugar, firmly packed
1 c. sifted all-purpose flour
1 egg
1 tsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. salt
1 c. uncooked quick-cooking rolled oats
1 c. walnuts, chopped
1/2 c. raisins

In a mixing bowl, cream butter and sugar until light and fluffy. Beat in flour, egg, vanilla, baking soda and salt. Stir in oats, walnuts and raisins until well mixed; mixture will be very stiff. Turn mixture into greased 9 inch square baking pan, spread evenly. Bake in preheated 400 degree oven, uncovered, for 12 minutes. Cool in pan. Makes 24 bars.

I've made these bars twice in a week because my husband just can't get enough of them! Chewy and delicious. This will be a go-to recipe for me as it is a lot less work than oatmeal raisin cookies but taste even better! This recipe is definitely a keeper.
