BLUEBERRY PIE
Basic pastry dough for 9 inch two-crust pie
4 c. fresh or frozen blueberries
3 tbsp. flour
1 c. sugar (2 tbsp. less, if wanted a little tart)
1/8 tsp. salt
1 tbsp. lemon juice
1 tbsp. butter

Preheat oven to 425 degrees. Line the pie plate with half the pastry dough. Wash and pick over the blueberries if you are using fresh ones; if you are using frozen berries, it is not necessary to defrost them completely. Mix the flour, sugar, and salt in a large bowl. Add the blueberries and lemon juice and toss well. Pile the mixture into the lined pan and dot with the butter. Roll out the top crust and drape it over the pie. Crimp or flute the edges and cut several vents in the top. Bake for 10 minutes, then lower the heat to 350 degrees and bake for 30 to 40 minutes or until top is browned.

Can use any other type of berry!!!

This was the first pie I ever made and it was a huge hit at Christmas Eve. I did a raspberry and a blueberry, it could not be easier! My husband was excited that I learned to make his all time favorite, blueberry. I did it with a crumble top and it was heavenly.
