“EASY FRIED CHICKEN SEASONING” IS IN:

EASY FRIED CHICKEN SEASONING 
3 cups self-rising flour
2 pkgs. tomato cup-a-soup mix
2 pkgs. Good Seasons Italian Dressing mix
1 tbsp. paprika
1/2 tsp. each garlic and onion powder (not salt)
1/2 tsp. Bell's Seasoning (or ground sage)
1/2 tsp. Old Bay Seasoning (optional)

Combine all ingredients and store in a jar until needed.

When ready to bake or fry a batch of chicken, melt butter and dip chicken pieces in butter (or beat an egg and dip chicken in the egg wash). Chopped fresh parsley may be added to the egg wash. (Cooks Note: Wash and pat dry chicken pieces in advance and season lightly with salt and pepper).

Roll chicken in dry mixture to coat. If desired, chicken may be dipped again and then rolled in bread crumbs.

Fry pieces in hot oil (about 360°F) or bake in a 350°F oven until golden and cooked through.

This makes enough mixture for about 2 or 3 chickens.

After you toss chicken around in flour/season mix if you would set it on a cookie sheet or something of some sort for about 30-40 minutes until the chicken absorbs all the dryness and is now kinda a sticky it is ready to fry this will help to keep your oil a little cleaner and give you restaurant quality crispy juicy chicken, you can even prep it up early & keep it covered in the frig so like if you have family coming or just hosting a dinner party you can do jojo, jojo's the same way but I like to double dip them.
