SEASONED FRIED CHICKEN 
5 (6 oz. ea.) boneless skinless chicken breasts
1 1/2 cups all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/4 tsp. paprika
1/4 tsp. black pepper
1/4 tsp. cayenne pepper
1/4 tsp. cumin
1/2 cup milk (more if necessary)
3 eggs
bread crumbs (as needed)
vegetable oil (for frying)

Heat oil to 375°F. Combine flour, baking powder, salt, paprika, black pepper, cayenne pepper and cumin.

Pat each chicken breast dry of juices using paper towels. Coat chicken in dry mixture. Set aside.

Whisk milk and eggs into the dry mixture (add more milk if batter is too thick). Coat battered chicken with bread crumbs.

Fry in hot oil for 4 minutes, flip and fry an additional 4 minutes. Transfer cooked pieces to paper towel.
