CHICKEN IN WHITE WINE SAUCE 
4-5 chicken breast halves
1 large onion chopped in large strands
1 1/2 cups white wine or white cooking wine
1/4 cup oil
1 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove garlic
2 tablespoons flour
2 tablespoons parsley
1 8oz bag sliced mushrooms
rice

Brown chicken breast and drain all but 1/4 cup of oil.

In a blender (or shaker or jar), mix the wine, the remaining oil, flour, and all spices except the parsley.

Combine chicken, onion and above mixture in pan and simmer for 1/2 hour.

Cook rice as directed. Add mushrooms and parsley and cook additional 10 minutes.

Spoon mixture over rice.

I made this last night for my family, and it was a BIG HIT! Absolutely fabulous! Had Basmati Brown and Red Rice with it and that just seemed to finish it off nicely. I did add the mushrooms to the sauce instead of to the rice, and thought that it was great. Also added more garlic.

I love this recipe and so does my husband. We also add more garlic and some oregano and serve with broccoli on the side. Also my husband loves the sauce so much we actually have started making it separately so he can have more sauce to go over his chicken and rice. I do add some to the chicken but we mainly cook it separately now so he has extra sauce lol.

Unbelievably easy but it looks and tastes sophisticated. I used the other cooks' advice and used 3 cloves garlic and it is definetley not too strong. I just wonder at the rather large amount of wine used. I know the alcohol burns off at boiling but other recipes use chicken broth instead of some of the wine. I may experiment with that.
