CHICKEN IN WHITE WINE AND YOGURT
SAUCE
 
4 chicken breasts, skinned and split
4 tbsp. butter
3 tbsp. flour
1/2 c. chicken broth
3/4 c. low fat yogurt
1/4 c. white wine
2 tsp. grated lemon rind
Freshly ground pepper
1/2 c. sliced mushrooms

Melt 2 tablespoons butter in a shallow baking pan. Place chicken breasts in the pan. Bake at 350 degrees, uncovered, about 30 minutes. Meanwhile melt remaining butter in a sauce pan. Add flour and cook briefly stirring. Add broth, stirring constantly, until mixture is thick and smooth. Add yogurt, wine, lemon rind and pepper, stirring until blended. Remove pan from oven, turn each chicken breast. Cover with sliced mushrooms and pour on sauce. Bake uncovered for 30 minutes. Serve garnished with a lemon twist and sprig of parsley. Serves 8.

The chicken is in the oven with the sauce, but I HAVE to say, that I tried that sauce and it BLEW my mind how incredibly delicious it was. I wanted to eat it as a soup. Wonderful recipe...Im always looking to make chicken "unboring" at home, and Im sure this will be a home-run! Thanks!

The recipe is ok.I thought there was too much yogurt in the sauce and not enough flavor (besides the acids). I recommend adding parmesan, fresh herbs, and or garlic. Also, brown the chicken before putting it into the over (in the same pan in which you are making the sauce). It will give the meat more flavor and speed up the cooking time.

My husband and I both loved this recipe. I used plain Greek yogurt instead of regular yogurt. Also, I didn't have lemon on hand so I added 1 tbsp. lemon pepper seasoning in place of the lemon and the ground pepper. Absolutely delicious and very easy!
