“BRAN MUFFINS” IS IN:
NEXT RECIPE:  BRAN MUFFINS

BRAN MUFFINS 
1 cup bran
1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1 egg, well beaten
1/2 cup milk or buttermilk
3 tablespoons molasses
1/2 tsp. vanilla
2 tablespoons melted butter
1/2 cup raisins or Craisins (optional)

Preheat oven to 350°F.

If using raisins, soak in warm water for 10 minutes.

Whisk together flour, salt, baking soda and baking powder, then add the bran.

Beat egg well, add milk, molasses and vanilla. Combine with the flour mixture.

Beat well and add melted butter. Stir in raisins or Craisins, if using.

Grease muffin pans well with shortening. Fill 2/3 full with batter.

Bake for 20-30 minutes.

Recipe may be doubled.

I added the 1/2 cup raisins along with 1/2 cup of craisins. The recipe could be just a bit sweeter.

I had to double the recipe to get 12 as I like big muffins and I added a cup of frozen raspberries as I don't care for raisins. These were almost like the ones Tim Horton's made one year which I became addicted to!

I've admired it already, having one experience from it, before once, but except bran, any sprout flour of wheat, for example, can also be a good mixture for a croquettes, but, as with this bran preparation, for the only before while of baking.
