“GERMAN APPLE CAKE” IS IN:

GERMAN APPLE CAKE 
2 eggs
2 cups sugar
1 tsp. baking powder
1 tsp. vanilla
4 cups fresh apples, peeled and thinly sliced
2 cups sifted all purpose flour
2 tsp. cinnamon
1/2 tsp. salt
1 cup vegetable oil
1/2 to 1 cup walnuts, chopped

Preheat oven to 350°F.

Grease a 9x13-inch pan and dust with flour; shake out any excess.

Combine all ingredients, mixing with a wooden spoon. Batter will be very stiff. Transfer batter to prepared pan and spread evenly using a wet spatula.

Bake for 45 to 60 minutes, or until a toothpick inserted in center of cake comes out clean.

Coconut Sauce:

1/2 cup butter (no substitutes)
1 cup sugar
1/2 cup half & half
1 tsp. pure vanilla or coconut extract

Combine ingredients in a heavy bottomed saucepan or double boiler and simmer over very low heat, stirring constantly, until mixture thickens enough to coat the back of a spoon. Serve warm over cake.

I did not make the sauce, but I did make the cake. I have to say that after it sat overnight, it was even better. All the moisture from the apples absorbed into the cake. I brought it to work and EVERYONE loved it.

This recpe looks like the one I got from my grandmother and we called it her Apple Walnut Cake. Only we use the sliced apples, chop them up and pour in the 2 cups of sugar and let it sit overnight and then add the rest of the ingredients and bake. I prefer to use black walnuts also. The cake is so moist it doesn't need a topping, so the topping is optional. Thanks for letting me share....

I made this for a birthday celebration when I knew there were going to be lots of fatty foods. Everyone ended up eating my cake and not the birthday cake. This recipe was fairly simple and absolutely delicious. Now my husband wants it made Sunday mornings with coffee.

Oh my goodness! It's like a party in my mouth, with the apples, cinnamon, walnuts and I added raisins, all those flavors wrapped into one tells me it is harvest season! I will be making this delicious German apple cake often.
