POOR MAN'S LOBSTER 
1/2 c. onion, slied
2 lg. garlic cloves, finely sliced
3 tbsp. butter
1 lb. Monkfish fillet, diced
Salt to taste
Pepper to taste
1 tbsp. mint, chopped
1/2 c. bread crumbs
1 tbsp. Parmesan, grated

Brown onion and garlic with butter in saucepan. Add diced fillet, salt, pepper and mint. Cover pan; simmer for 5 minutes stirring fish while it cooks to a pure white color. Remove cover; add bread crumbs. Stir until fish absorbs all the juice. Add cheese and cook 3 minutes uncovered.
