LIGHT AND CHEESY BROCCOLI
CASSEROLE
 
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick
1/4 c. butter, melted
2 eggs
1 tomato, peeled and sliced
1/4 c. grated Parmesan cheese

Grease pan - spread broccoli - beat sour cream, cottage cheese, Bisquick, butter and eggs with hand beater 1 minute. Pour over broccoli. Arrange tomato slices on top. Sprinkle with Parmesan cheese. Bake in 8 x 8 x 2 inch baking at 350 degrees.

I started making this recipe at least 30yrs ago for Thanksgiving. It became one of our traditional dishes. All three of my children love it. I've never put the tomato on top but I do use more Parmesan cheese and fresh steamed broccoli. :)
