LIGHT AND CHEESY BROCCOLI
CASSEROLE
 
1 (10 oz.) pkg. frozen chopped broccoli
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick
1/4 c. butter, melted
2 eggs
1 tomato, peeled & thinly sliced
1/4 c. grated Parmesan cheese

Heat oven to 350 degrees. Place thawed and drained broccoli in greased 8"x8"x2" dish. Beat sour cream, cottage cheese, Bisquick, butter and eggs with hand beater 1 minute. Pour over broccoli. Arrange tomato slices on top, sprinkle with Parmesan cheese. Bake until golden brown, about 30 minutes.
