OVEN BAKED CHICKEN 
8 chicken thighs, skinned (or whole cut up chicken)
1/2 c. flour
1 tsp. paprika
1/2 tsp. poultry seasoning
1/2 tsp. onion powder
1 tsp. salt (opt.)
1/2 c. skim milk

Preheat oven to 400 degrees. Spray large baking sheet with cooking spray. Combine flour and seasonings in wide bowl. Pour milk into second bowl. Dip chicken pieces into milk, then into seasoned flour, coating well. Place on baking sheet. Bake 25 minutes. Turn over; bake additional 15 minutes.

Reviews sound great. I am going to try this using buttermilk, as coating would stick better. Have also heard that adding "potato flakes" when dipping chicken - helps to make it more crispy. Am also going to experiment by adding about half & half flour & potato flakes... just to see. I know a lot of people hate it when others either change a recipe or come up with idea's - but this recipe itself... sounds wonderful. Just trying to come up with a way to enhance it - even more... Thanks to whoever posted this!
