SKILLET CARROTS 
1 1/2 lbs. carrots
4 tbsp. butter
3 tbsp. brown sugar

Cut carrots diagonally into 1/2 inch slices. Place carrots, butter and brown sugar in a skillet. Add enough water to just cover carrots. Cover the skillet and bring to a boil. Cook at a low boil for 10 to 15 minutes until tender and most of the liquid has evaporated.

Have used this recipe for years... with one exception. I simply place carrot chips/slices in water... top with brown sugar... and boil. As this cooks... the brown sugar flavor is instilled into the carrots.
