CARROT - BACON SKILLET 
4 c. shredded carrots
3 slices bacon
1/2 tsp. salt
Pepper to taste

Peel and shred carrots. Add 1 tbsp. water. Cover and microwave on HIGH for 7-9 minutes, stirring occasionally until crisp-tender. Fry bacon until crisp. Drain all except 2 tbsp. fat from skillet. Stir in drained carrots, salt and pepper. Heat through. Crumble bacon into carrots, toss, and serve. Serves 5- 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
