MICROWAVE PEANUT OR PECAN
BRITTLE
 
1 cup sugar
1/2 cup corn syrup, light
1 cups peanuts, roasted, salted, shelled
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Combine sugar and corn syrup in a 2-quart microwave-safe dish, and microwave on high for 4 minutes.

Rub skins away from peanuts (if any remain) using a clean terry towel.

Stir in roasted peanuts, and microwave on HIGH for three to five minutes, or until lightly brown. Add butter and vanilla to syrup, stirring well.

Microwave on high for 1 - 2 minutes more. Stir baking soda into mixture and mix until foamy.

Pour onto a greased cookie sheet. Allow to cool. Break into pieces when fully cooled.

Caution: Boiling sugar is very hot and will burn easily!

Since microwave ovens vary in power, you may need to adjust your cooking time.

I use this recipe all the time and it has never burned. After putting in nuts, I m/w for exactly 4 min. Then proceed with rest of recipe. I use it in a 800 watt m/w. This might be the difference.

I have made this several times. The timing varies by how strong your microwave is. I had to decrease the time by a minute during the last two stages to get it just right. It didn't work well when I doubled the batch either!

Mine came out a little soft too, but I prefer it that way...clusters, not brittle. When I made it again I used 2 cups of broken pecans instead of the 1 cup of peanuts and it was fantastic. (I also added some fresh ground cardamom - I recommend this highly.)

I have made it about 6 times now and 3 of those times with cashews instead. The last 2 times I made it that way I have left out the baking soda and it brings out the flavor of the cashews more, it tastes awesome. I do find that you need to cut the time down just a little with the cashews or they burn.

I've made this recipe for years as gifts with great results. But every year I have to adjust just a bit. My microwave is more powerful than most and that is the cause of the burning. If you burn, try trimming down the time on each step. I usually go 3 1/2, 3, and 1 1/2 minutes each.

This recipe is for a 600 watt microwave. If you have a 900 watt microwave you have to cut time down by 3/4%.

This is a traditional candy in my family. We found that if you microwave the mix without peanuts for the first 4 minutes the syrup mixture will harden better in the final stage and the peanuts don't burn. The final mixture spreads better if the buttered pan is warm.

Thanks for the suggestion about the warm cookie sheet. I have always wanted to make thin peanut brittle and never could get it thin till I warmed the cookie sheet. Also, I like a little extra butter and vanilla. It didn't seem to hurt the consistency

The KEY to this recipe is to have FRESH baking soda! Also, make sure your ingredients are room temperature. My Aunt Mabel made this all the time.
