MICROWAVE DIXIE PEANUT BRITTLE 
1 1/2 c. raw shelled peanuts, skins on
1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In a 1 1/2 quart casserole dish, stir together peanuts, sugar, syrup, and salt. Microwave on high for 4 minutes. Stir well. Microwave for 4 more minutes. Stir in butter and vanilla. Microwave 2 more minutes. Add baking soda and quickly stir until light and foamy. Immediately pour onto lightly greased baking sheet; spread out as thin as possible. When cool, break into small pieces. Makes about a pound.

Not all microwaves are created equal. If your brittle is over cooked, try cooking a minute or 2 less, or use a larger size casserole dish. If it doesn't ever get brittle, try adding another minute to the cooking time, or use a smaller casserole dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
