LOW SUGAR MICROWAVE PEANUT
BRITTLE
 
Only a third of the sugar!

1/2 cup Splenda
1/2 cup Splenda for baking
1/2 cup Karo corn syrup
1 1/2 cups raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Combine first 5 ingredients in 2 quart microwave safe bowl. Use wide bowl with straight sides. Do NOT cover. Microwave on HIGH for 4 minutes. Stir. Microwave on HIGH for 4 minutes. Add butter and vanilla. Stir until butter is melted. Microwave on HIGH for 2 minutes. Stir in baking soda until light and foamy, don't over stir.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces and store in airtight container.
