MICROWAVE PEANUT BRITTLE 
1 c. sugar
1 tsp. butter
1 c. salad peanuts
1 tsp. vanilla
1/2 c. light corn syrup
1 tsp. baking soda

Generously butter a cookie sheet. In 2 quart microwave bowl, combine sugar and corn syrup. Stir until well mixed. Microwave on high 4 minutes. Remove from oven and add peanuts; stir until well mixed. Be very careful. Microwave on high for about 4 minutes. Remove from oven and add butter and vanilla; stir until well mixed.

Microwave 1 1/2-2 minutes. Remove from oven; add baking soda. Gently stir until mixture is light and foamy. Pour immediately onto prepared cookie sheet, spread out with buttered spatula.

This step must be done quickly or brittle will start to harden in bowl. Cool for 30 minutes to an hour. Break into pieces.

Makes about 1/2 pound peanut brittle.

Remember that all microwave ovens are different! Cooking times may need to be adjusted for your oven for best results.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This is a very good recipe. In the past I had trouble getting my brittle to spread thin, I decided to try and keep my cookie sheet warm so i covered a electric griddle and put buttered foil on it and when I pour the brittle out it spreads easily. i have used the same method with cookie sheets in the oven at 180°F, works great.
