BARTLETT'S TEN MINUTE MICROWAVE PEANUT BRITTLE | |
1 1/2 cups raw skins on shelled peanuts 1 cup granulated sugar 1/2 cup light corn syrup (Karo) 1/8 tsp. salt 1 tbsp. butter 1 tsp. vanilla extract 1 tsp. baking soda Using a round Pyrex glass bowl, put in peanuts, sugar, corn syrup and salt. Place in microwave set on ten minutes. At 4 1/2 minutes add butter and vanilla, stir quickly (be very careful because mixture is very hot) then restart microwave. At the end of the time quickly stir in baking soda until light and foamy. Use a potholder to hold the bowl. Immediately and carefully, using potholders, pour onto a cool cookie sheet.
