“LEMON POUND CAKE” IS IN:

LEMON POUND CAKE 
1 1/2 cups butter, softened
3 cups sugar
8 eggs
3 cups all-purpose flour, sifted
1 tablespoon plus 1 1/2 teaspoons lemon extract
1 tablespoon plus 1 1/2 teaspoons lemon juice

1. Cream butter, gradually add sugar, beating until light and fluffy. Add eggs; one at a time, beating well after each addition. Add flour, mixing well. Stir in lemon juice and extract. Pour batter into a greased and flour bundt pan.

2. Bake 350*F. for 1 hour and 15 minutes or until tooth pick inserted comes out clean.

3. Cool 15 minutes in pan.

Everyone "loved" this pound cake. I was afraid the sort of hard crust would turn my family off, but to my surprise it was a big hit. The cake is very rich and moist, so the cake and crust offset each other.

Loved the simplicity of this recipe!. I did not have lemon extract on hand, so I substituted some of the ingredients (zest of 2 lemons 1 tablespoon 3 teaspoons fresh lemon juice, 1/4 teaspoon almond extract). This will be one I add for potluck parties!

A very simple cake to put together. I added a few walnuts and I used Meyer lemons. Also added a pinch of salt and some vanilla bean. This cake had the most wonderful crumb!!! It cooked evenly in exactly the time that was given. Tasted smooth and satisfying. I will make this cake again and again.

This is the easiest pound cake I've ever made and is one of the most delicious. The crust is very brown and crunchy. I was thinking about icing it, but when I saw it, there was no way I was going to cover that beautiful crust. It doesn't need a thing added to it.

This is a very good cake. When I bake again I am going to use 1 teaspoon of vanilla extract and 1 additional teaspoon of lemon extract. It doesn't have enough lemon favor to be called a lemon pound cake.
