QUICK AND EASY YEAST BISCUITS 
1 pkg. yeast
1 c. warm water
1/2 tsp. salt
3 tbsp. shortening
2 tbsp. sugar
2 1/2 c. flour

Dissolve yeast in warm water. Add remaining ingredients; mix well. Knead 2-3 minutes. Roll out dough to 1/2 inch thick. Cut with a biscuit cutter. Let rise 30-40 minutes until doubled in size on an ungreased cookie sheet. Bake at 375 degrees for 10-15 minutes or until brown.

Hi Margaret,

Check the date on your package of yeast. If it doesn't foam while dissolving in the first 5 minutes, discard the inactive yeast and buy new yeast.

Make sure that the water you dissolve your yeast in is not too hot (110°F-115°F). For best results, use an instant read thermometer. Put the rising bread in a warm, draft-free place while it rises.

I have been searching for years for the best yeast biscuits to add to my baking list. These are definitely the best and easiest!! Can't rave enough -- so quick and easy to make, and always good results. I use melted butter or margarine instead of shortening, and add a small amount of sugar to the water and yeast -- when it foams -- it's ready to use. These freeze so well, and reheat in the microwave. I keep a supply in zip-lock bags in freezer ready to go!
