MOMMA KATY'S ENCHILADA CASSEROLE 
1 lb hamburger meat
2 cans Old El Paso Enchilada Sauce (mild is great)
2 small cans green chopped chilis
12 corn tortillas
1 can cream of chicken soup
1 can cream of mushroom soup
1 small white onion
2 cups of shredded cheese of your choice

PreHeat Oven at 375 degrees. Brown hamburger meat, drain off fat. While browning meat, cut tortillas into one inch squares then mix with ALL ingredients except the cheese. When burger is done, mix with the other ingredients and fill a 9x13 glass casserole dish. Spread cheese evenly over mixture cover with tin foil and bake for 45 mins. Make sure the tinfoil is domed over the dish or cheese will stick to foil upon removal. Wonderful topped with sour cream or hot sauce or just plain. Serves about 6-8

We loved it but we used strips of 12 corn tortillas, 2 cans of enchilada sauce, 1 can of chopped green chilis. And it was very good (if you use 1 can of sauce then it is too thick). Great for a family.!

This recipe is very similar to the one I have been using for years. My recipe calls for one jar of Old El Paso medium taco sauce in place of one of the cans enchilada sauce. I don't use green chilies, although I think I will try it. I don't use the onion either, although the original recipe does call for it. It has been a family favorite for years. I like to serve it with spanish rice and refried beans. I don't recommend using more than 12 tortillas. My recipe calls for 2 lbs of ground beef drained and rinsed and you could always add a little more cheese. These suggestions should cure the "runny" problem. It also thickens as it cools.

This was very good but too runny. I will probably use 6 to 12 more tortillas the next time I make it. Loved the flavor, it was quick and easy to make. Just needs more corn tortillas.
