MICROWAVE BANANA BREAD 
1 1/2.c flour
3/4 c. sugar
1/2 c. plus 2 tbsp. soft butter
1/3 c. milk
2 eggs
2 med. bananas, sliced or mashed
1 tbsp. lemon juice or vinegar
1 tsp. baking soda
1/2 tsp. salt
1/2 c. nuts (1/4 cup plus 1/4 cup)

Combine ingredients in order given, except for 1/4 cup nuts. Mix well. Lightly butter a microwave Bundt pan. Sprinkle with remaining nuts. Pour in batter. Cook for 7 to 9 minutes on full power or until done. Let stand 5 minutes before turning out of pan.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Tried cooking 7 and 8 minutes and the cake stuck to the micro Bundt pan. Texture and taste was very good. Made a frosting which covers cake surface irregularities.

I made this recipe yesterday in my Pampered Chef stoneware. I put it in the microwave for 10 minutes with the cover on, then let it sit in the stoneware for 5 minutes. It came out perfect. Moist and delicious!

I changed the recipe a little and made muffins instead of bread... they turned out great! This is a good base recipe, easy to tweak to your family's taste. :)

I tried this today and it came out rather nice. The top was a bit deformed, though, because it inflated inside the microwave.

And I would definitely recommend using really, really ripe bananas because those are sweeter. The banana taste in mine was very subtle because I didn't use overripe bananas, but you can still tell it was a banana bread. ^^

I also kinda overcooked mine a bit - the outside of the bread became a little too dry.

But, I am very satisfied with this recipe. I'll definitely be making this next time and I hope it'll turn out better than my first try.

Very good for a first time try. Cooked for 12 minutes on high (800) and still not quite done. Remember that it cooks from center outward, unlike in conventional oven, so test for doneness at edges, not in center. (remembered that after the fact unfortunately) Also stuck a bit to bottom of pan. Perhaps a dusting with flour? Will definitely become my standard banana bread making method.

Had to improvise a bit based on what I had on hand. Used baking powder instead of b. soda, light brown sugar instead of reg. and didn't have nuts or Bundt pan but did have an oval Corning Ware casserole dish with glass lid. Nuked for 10 min total, let stand for 5. Interesting souffle-like consistency and quite yummy. Put some dark Maple Syrup on the second piece = even better! Would def serve at breakfast in lieu of pancakes or french toast.

Honestly I had my doubts about microwave cake, but since the oven I have is pretty old and cakes never rise there I thought I'd give this recipe a try. It's very easy and tastes amazing. My only change was I used some chocolate chunks instead of the walnuts :D

I've made this numerous times and it always comes out well. The last time I put a ring of baking paper in the bottom of the Bundt pan and the top of the bread came out perfect, I.E. no deformities. Also added a bit of cinnamon. Great, easy recipe

Perfect! I was leery of baking in the microwave, but this recipe is a winner! I used the lemon juice & added some allspice to the flour. Only used one bowl and mixed everything as I went along, including mashing the over ripe bananas I had directly into the batter. I forgot to grease the Bundt pan, but no problem, it came right out once inverted. I made a quick drizzle icing for the top & lightly covered with sprinkles for some flair. I would make this again & again.

Amazing! I used wheat flour... apple cider vinegar... plain salted butter... and the rest as in the recipe... used a glass bowl... came out a bit dry....but hey! A lovely homemade bread/cake in 5 to 8 minutes... that's amazing!!! ... thanks!
