BANANA BREAD 
4 eggs
4 med. bananas
1 tsp. vanilla
4 slices dry bread
1 tsp. baking soda
1/8 tsp. black walnut extract (optional)
2/3 c. dry non-fat milk
Sweetener to equal 6 tbsp. sugar

Beat eggs 10 minutes or until thick. Add bananas and vanilla and beat at low speed for 5 minutes. Make fine crumbs (from bread). Add sweetener and dry milk. Gently fold crumb mixture into egg mixture. Bake in non-stick or wax paper lined loaf pan at 350 degrees for 50 minutes.
