DIET WORKSHOP PIE 
1 env. gelatin
5 pkg. Sweet and Low
1 tsp. vanilla
1 tsp. lemon juice
1 lb. cottage cheese
1 can crushed pineapple (large)
1 egg

Mash cheese; soften gelatin in pineapple juice. Combine all ingredients and pour into 9 inch pie plate. Sprinkle top with cinnamon. Bake at 350 degrees for 30 minutes. Cool and refrigerate.

My mom worked for Diet Workshop, and she made this pie all the time, but I wasn't allowed to have any since it was her diet food. One day I got to taste it and I really liked it. Now that I found the recipe I get to make it and eat the whole thing!! Not at one sitting... lol

We made it using 3 bricks of Neuchaftel cheese instead of cottage cheese. It was truly amazing!
