FRUITY CHEESE PIE (DIET) 
2 c. cottage cheese (16 oz. carton)
1/2 c. lite cream cheese (60 calories per 2)
1 pkg. sugar free Jello (4 servings), lemon is best
1/4 c. thawed apple juice concentrate
3/4 c. boiling water
1/4 tsp. almond extract
1 (9") graham cracker crust

Dissolve Jello in boiling water. In blender combine cottage cheese, cream cheese, apple juice, almond extract and dissolved Jello. Blend thoroughly for 3 to 4 minutes and smooth. Pour into pie crust. Chill 1 to 2 hours. 6 servings. 40 calories per slice.
