CORN SOUFFLE 
1 stick butter
1 pkg. Jiffy corn muffin mix (1 1/2 c.)
1 (16 oz.) can cream-style corn
1 (16 oz.) can whole kernel corn, drained
2 eggs, beaten
8 oz. sour cream

Mix.

Bake at 350°F for 20 to 30 minutes in a 9 x 13-inch pan.

Try adding chopped sweet red bell pepper,finely chopped

I totally agree with Chanda. But instead of pickled jalapenos, try fresh, and dice to your own accord, onion, and green onion finely chopped with a tiny pinch of salt, and add shredded cheddar cheese to top it off lightly.

I love this recipe..I use a half stick of butter on top. I don't put it in the mix. Use cold butter and chip it all over the top then sprinkle a 1/4 cup of sugar over the top! it is to die for! Yum!

According to my dietician niece if you take out the butter and replace it with only 1/2 cup of unsweetened applesauce it is healthier for you. It is definitely very good.
