SHERRY'S LO-CARB
SPINACH-MUSHROOM QUICHE
 
4 eggs or equivalent egg substitute
1/2 cup fresh mushrooms, sliced
1 cup fresh spinach, cut into strips
1 cup lo-fat cottage cheese
1/2 cup lo-fat mozzarella cheese
1/4 cup soy Parmesan cheese
4 green onions, chopped
1-1/2 tsp. garlic-pepper seasoning
1/4 tsp. dried thyme

Preheat oven to 350°F.

Combine all ingredients in a large bowl, mix well.

Spray a 9 x 13-inch glass baking dish with cooking spray. Pour contents into pan.

Bake for 45 minutes or until set.

Sherry...this recipe is a keeper...thank you for sharing it. I baked it in a 9x9 square casserole and it came out fine. I'll definitely make it again. May also use fresh red, orange or yellow peppers in place of mushrooms in the future.
