SOUR CREAM MUSHROOM QUICHE 
1/4 c. butter
1 lb. mushrooms, sliced
2 tbsp. minced green onions
2 tbsp. Worcestershire sauce
1 tsp. salt
1 tsp. lemon juice
3 eggs, beaten
1 1/2 c. sour cream
Ground pepper to taste
1 quiche shell, partially baked
1/2 c. grated Gruyere cheese

Preheat oven to 375 degrees. Melt butter in saucepan and briskly saute mushrooms and green onions about 5 minutes. Add Worcestershire, salt and lemon juice, stir well, then drain. Combine eggs with sour cream and add to mushroom mixture. Season with pepper to taste. Pour into pastry shell and sprinkle with cheese. Bake for 30 minutes or until puffed and brown. Makes 4 to 6 servings.
