ZESTY MEATLOAF 
Hamburger
salsa
Stove Top Stuffing
eggs
salt and pepper, to taste

Preheat oven to 400°F.

Combine 1-3 lbs of hamburger meat, 1 jar of salsa (I use medium, but picante may be used instead), 1 egg, 1 box of Stove Top Stuffing and mix until well blended. Add salt and pepper to taste.

Place in a slightly greased loaf pan or nonstick pan and bake for 30-60 minutes.

Meatloaf is done when knife inserted comes out clean.

I got this recipe from a friend in Indiana and it is a big hit. Enjoy!

Great. It was a hit at my house. I did use medium Picante and I added 1 lb. of mild pork sausage an used 2 eggs since I started with 3 lb. of beef. Its quick and easy, my kind of recipe.

There is another recipe like this that I use. It's called Turkey Loaf though. Replace ground turkey with ground beef and I don't use salsa. But everything's the same. Add gravy on top when it's done or some BBQ or ketchup on the side. It's great!

Just made the zesty meatloaf with the salsa, ground beef, egg, stovetop - I used the one that is for chicken. I have made a similar recipe without the salsa but have to say this is way way better. Thumbs up! I cooked in muffin tins and it was awesome! Thanks for the recipe

My ground beef was 90% organic free range beef, very dry so I used about 1/2 package of Stove Top stuffing, a large egg and picante sauce (didn't measure). I could tell it was juicy enough. Baked in the Instant pot on high pressure for about 45 minutes and then browned the top in the oven. Easy recipe and so good! I am going to slice it and freeze. I live alone and this will be great to take out a serving.
