“SPINACH BALLS” IS IN:
NEXT RECIPE:  SPINACH LASAGNA

SPINACH BALLS 
1/4 cup (1/2 stick) butter, melted
1 (10 oz.) box frozen chopped spinach, cooked & drained well
1 cup Pepperidge Farm seasoned crumbs for stuffing
1 tbsp. onion, minced
1/2 cup Parmesan cheese
pinch of salt, pepper and garlic
3 whole eggs, beaten

Mix together all ingredients and refrigerate until mixture "sets up".

Form into balls and bake at 350°F 8 to 10 minutes or freeze.

Note: If frozen, bake 20 minutes at 350°F.

This recipe never goes out of style! Every occasion where I have taken them, folks want the recipe and I am required to take them again. I usually have to make double batches!

I serve them with ranch dip - 1 (16 oz.) container of dairy sour cream mixed with 1 package of dry Hidden Valley Ranch dressing/dip mix.

I've never liked spinach. To help with my bones, I've been looking for ways to eat it so that it actually tastes good to me.

I would just like to say, this recipe is the only recipe that includes spinach as a main ingredient that I've actually liked! I love them, and will definitely be serving them more often at my house.

Very easy to make and so delicious! These are always a hit. They also freeze well for future use.

Just place on a cookie sheet w/space between them, pop into the freezer for overnight. Next morning, place about a dozen of them into ziplock bags and throw into the freezer again. when you need to cook them, let them thaw out about 1 hour before cooking. you can also use fresh spinach and just chop it in your food processor and it works just as well.
