SPINACH BALLS 
4 pkgs. frozen, chopped spinach
4 c. herb stuffing
2 diced onions, sm.
8 eggs
1 1/2 c. melted butter (or less)
2 garlic buds
Salt and pepper to taste
1 c. Parmesan cheese

Thaw and drain (very thoroughly) spinach, mix all and chill 2 hours. Roll into balls and refrigerate or freeze until needed. Bake at 325 degrees for 20 minutes. Makes about 75.
