NO CHOLESTEROL LOW FAT OATMEAL
COOKIE
 
3/4 c. flour
2 tsp. vanilla
1/2 c. sugar and 1/2 c. brown sugar
4 egg whites or 2 whole eggs
1 1/2 c. minute oatmeal
1/4 tsp. baking soda
1/4 c. vegetable oil
1/4 c. chopped walnuts

Sift flour and baking soda together. Next in separate bowl, blend vanilla, oil and sugars Then add egg whites. Finely stir in the flour, oatmeal and nuts. Preheat oven to 350°F and spray cookie sheet with Pam. Drop dough onto sheet with teaspoon. Bake 8 minutes.

Makes 12 cookies.

These cookies are great and super easy. Makes around 1 dozen if you make them slightly larger than an oreo size. I substitute cranberries for nuts and it's great!

Had no margarine or shortening in the house, so searched for a recipe without them. I found your recipe and made it without any changes. Was pleasantly surprised at how perfect they looked and was very happy with the texture and flavor. Would only double the recipe to make more. They quickly disappeared from the rack! Well deserving of 5 stars.

This recipe exceeded my expectations so I will definitely make these cookies again. I only used brown sugar and substituted 1/4 of the oatmeal with 1/4 cup ground flax seed and the 1/4 cup walnuts with 1/8 cup almonds, 1/8 cup cranberries, and 1/8 cup dark chocolate chips. They were really good. Nice and soft and moist. It's great to only need 1/4 oil. Next time I'm going to try to reduce the sugar by 1/2 cup and increase the chocolate chips and cranberries by 1/8 cup each.

Beware if you are preparing these for folks who are used to the full-fat version. The outcome is healthy-yet-bland, so add some chocolate pieces, a sprinkle of cinnamon, or other savory to give it that TASTE that it needs. With adjustment, this is a good base, but won't be a star attraction on the block party buffet table.
