LOW FAT OATMEAL RAISIN COOKIES 
1/8 c. cooking oil
1 1/2 c. firmly packed brown sugar
3-4 egg whites
2 tbsp. skim milk
2 tsp. vanilla
1 3/4 c. flour
1 c. raisins
3/4 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
2 1/4 c. quick cooking oats
1/4 c. dry oat bran high fiber hot cereal

Heat oven to 350 degrees. Oil baking sheets lightly. Combine oil and brown sugar in a large bowl. Add egg whites, milk and vanilla. Blend well. Combine flour, salt, baking soda and cinnamon. Add to above mixture; mix well. Stir in oats, oat bran and raisins.

Drop by slightly rounded measuring tablespoons onto baking sheets. Bake at 350 degrees for 9-10 minutes or until bottoms are lightly browned. (Tops will not brown.) Cool on baking sheets 2 minutes. Remove to cooling rack.

very dry cookies. i added 1/4 cup alpplesauce and they were still dry. next time i'll will try even more applesauce.

Hi Pat,

Unfortunately, that is one of the pitfalls of low fat baking. If you plan to make them again, try increasing the oil as well as the applesauce - it's really the fat that keeps cookies from being dry.

I made these yesterday. I used fat free milk and liquid egg whites plus I left out the fiber cereal.. OMG.. I can NOT stop eatting these. They are sooooo good. I will b making these again...

Good suggestion on the yogurt... I tried blueberry yogurt and left out the raisins, also used almond extract instead of vanilla. It was great!
