FRIED CHICKEN IN BATTER 
2 or 3 lbs. chicken, cut in pieces
1 c. milk
1 tsp. baking powder
1 egg
1 c. sifted flour
1 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1/2 tsp. paprika

Beat egg and stir in milk. Add flour, baking powder, salt, sugar, pepper, and paprika. Beat until smooth. Dip pieces of chicken in batter and fry at 350 to 375 degrees for 15 minutes. (Very meaty pieces takes up to 20 minutes.) Chicken can be fried with flour only.

The batter was extremely thick..I had to add extra milk to make it manageable. Once in the fryer the batter was so heavy it fried the chicken to the fry basket and was really hard to get apart.

The batter wasn't very crispy either so I was pretty disappointed with the texture. The overall flavor was really good though! I had to add extra salt/pepper but that was no problem. I'll only use 1/2 cup of flour or less next time if I use this again.
