LEMON PEPPER BAKED CHICKEN
3 chicken breasts
6 Ritz crackers (or more)
2 tbsp. butter
2 tbsp. lemon pepper seasoning (Lawry's)
Pam

Preheat oven to 350°F. Spray a baking pan with non-stick cooking spray (Pam).

Melt butter. Crush Ritz crackers. Mix the crushed Ritz crackers and the lemon pepper together in a bowl.

Dip the chicken into the butter and roll the chicken in seasoned cracker mixture.

Bake in 350°F oven for about 45 minutes or until properly cooked.

Personally, I enjoy eating this with stuffing on the side. I'm sure it'd also go well with white rice, mashed potatoes, corn, or some steamed vegetables.

Serves 3.

This recipe is a must-have in my weekly rotation. The lemon pepper seasoning gives it that extra kick, and the Ritz cracker crumbs make for an addictive crispy outer shell.
