Baked Boned Chicken Breasts

 Amanda says:
We made this and there is not nearly enough marinade for all the chicken. We had to double it but could have tripled it to have a little extra.

Outstanding. Moist, and flavorful, very simple. People raved about it.

@Amanda I agree with the "not nearly enough marinade," statement. I used chicken thighs instead of breasts because that is what I had, and the recipe still tasted delicious.

This is a keeper. I had an appointment but wanted dinner on time; so, I put the chicken in the oven with aluminum foil loosely on top at 325°F. Came home two hours later, took the foil off and baked another 30 minutes. WOW! My husband who pretty much never has anything nice to say about a meal, raved about it. I doubled the sauce but will triple it next time. Scrumptious!

I doubled the ingredients (except the bread crumbs, 3/4 cup was actually plenty) and used 3 very large split chix breasts, bone in. It just didn't do it for me. I found it too spicy (although I didn't double the pepper) but don't know why as the ingredients aren't really spicy. Glad I did this with the skin on so I could just take the skin off and eat the chicken.

Very good recipe. I also doubled the marinade, removed the skin from the chicken, and covered the dish for 1/2 hr while baking. Really tasty and easy to make as well.

Great recipe. I would suggest tripling the sauce and then covering with breadcrumbs. Cooked at 37°F5 for an hour and 15 minutes and the chicken was crispy on the outside and extremely moist on the inside. I used bone-in breasts, but took the skin and fat off first. Great recipe, thanks! Will make again.

Tasty recipe although next time I'll cut back on the pepper a bit. I didn't have any breadcrumbs so I substituted 8 crushed up Breton crackers. Also, I baked the chicken for just 50 minutes so it wouldn't dry out. I will definitely keep this one on file!
