SOUR MILK OATMEAL MUFFINS 
Soak 1 cup oatmeal and 1 cup buttermilk or sour milk for 10 to 15 minutes. Add 1 egg and 1/2 cup brown sugar and mix well. Prepare flour mixture of 1 cup flour, 1/2 teaspoon salt, 1 teaspoon baking powder and 1/2 teaspoon baking soda. Add to oatmeal mixture and mix until flour is wet. Mix in 1/3 cup Wesson oil. Spray 12 muffin cups with Pam. Fill with batter. Bake at 400 degrees for 20 minutes. Our Sunday morning before church favorite.

These are really nice moist muffins. I added some spices--cinnamon, clove, ginger and nutmeg. Kids would probably want some extra sugar too but this was perfect for me!

I used fat free Half and Half, but otherwise followed the recipe. Baked in extra large muffin tin[6] for 25 minutes. They turned out perfect. Excellent recipe!

I had some sour goat milk, I made bread, then found your recipe. I just made two different batches of muffins. I made the first following the recipe, I ate them as they came out, so I made a second batch, I put in raisins, and other flavors. Doing my best not to eat them all! I will be making them again real soon.

Great Simple Recipe!!! I added a few spices cinnamon, nutmeg, vanilla essence, came out perfect. Not very sweet, but ideal for me!!

I didn't want to make muffins so I made it into a coffee cake. I also added chopped up nectarines and 2 tbsp of ground flax seed. I think chopped nuts and other spices would taste great as well. It's a great and simple recipe!
