CHINESE FRIED RICE 
Cooked, cold, leftover white rice
2 to 3 tbsp. sesame oil
Cold peas
Diced carrots
Green onion
Water chestnuts
Chopped leftover beef, ham, pork, chicken or shrimp (opt.)
1 to 2 eggs, beaten
Soy sauce
Ground pepper

In a large skillet, heat 1/2 of oil; quickly toss vegetables and add eggs. Cook, stirring constantly until eggs start to set. Add remaining oil and the rice and meat or shrimp, if desired. Add soy sauce to taste, enough to turn the rice light brown. Toss and stir until hot.
