FAVORITE STRAWBERRY - PINEAPPLE JAM | |
1 qt. strawberries 20 oz. can crushed pineapple, drained 2 tbsp. fresh lemon juice 2 - 3 tbsp. grated orange rind 1 3/4 oz. pkg. powdered pectin 5 c. sugar Wash and hull strawberries. Crush strawberries slightly; place in large, heavy kettle. Add remaining ingredients except sugar; mix well. Bring to a boil; add sugar. Mix well. Place over high heat; baring to a full, rolling boil. Boil hard for 1 minute; remove form heat. Stir and skim for 5 minutes to cool slightly. Pour into sterilized jars; seal with melted paraffin. Yields 3 pints. |
