FAVORITE STRAWBERRY - PINEAPPLE
JAM
 
1 qt. strawberries
20 oz. can crushed pineapple, drained
2 tbsp. fresh lemon juice
2 - 3 tbsp. grated orange rind
1 3/4 oz. pkg. powdered pectin
5 c. sugar

Wash and hull strawberries. Crush strawberries slightly; place in large, heavy kettle. Add remaining ingredients except sugar; mix well. Bring to a boil; add sugar. Mix well. Place over high heat; baring to a full, rolling boil. Boil hard for 1 minute; remove form heat. Stir and skim for 5 minutes to cool slightly. Pour into sterilized jars; seal with melted paraffin. Yields 3 pints.

I followed the recipe exactly and had great results. I did process in a boiling water bath for 10 minutes instead of using the paraffin wax. I ended up with 1 pint, 3 half pints, and 4 quarter pints. The flavor combination was just what I was looking for! I love the orange zest in this jam, it gives it a nice tropical kick combined with the strawberry and pineapple, and the lemon juice tied it all together with a bright tartness. If you are tired of just plain strawberry jam, do give this fabulous jam a try, you will not be disappointed!

Not only is this recipe great exactly as-is, but it makes a great 'base' for customizing. I made my first 3 batches following the recipe with great success. The jam set perfectly and the flavor is wonderfully tasty. Today, I made another batch but dropped the orange peel and added 1/3 c. coconut flakes to the fruit to cook, and 2 t. coconut extract after removing from heat. I call it Strawberry Pina Colada Jam. I could have added more coconut, but I'm not crazy about coconut's texture. Love the flavor though!
