PORK CHOPS WITH BALSAMIC-STRAWBERRY SAUCE | |
1/3 cup chicken broth 1/4 cup white balsamic vinegar 1/4 cup lo-sugar strawberry jam 3/4 tsp. dried Italian seasoning 3/4 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. pepper 4 pork loin rib chops, 1"-thick 1 tbsp. oil 1-1/2 cups strawberries, trimmed, quartered 4 cups baby spinach In bowl, whisk together broth, vinegar and strawberry jam. Reserve. In a small bowl, combine Italian seasoning, garlic powder, salt and pepper. Rub over chops. In a large skillet, heat oil over medium-high heat. Add chops, cook, turning once, until no longer pink, about 7 minutes per side. Transfer chops to plate. Cover with foil to keep warm. To same skillet over med-high heat, add reserved broth mix. Bring to boil, cook, stirring occasionally until thickened, 4-5 minutes. Remove from heat, stir in strawberries. Arrange spinach over serving platter, top with pork chops.
