PORK CHOPS WITH
BALSAMIC-STRAWBERRY SAUCE
 
1/3 cup chicken broth
1/4 cup white balsamic vinegar
1/4 cup lo-sugar strawberry jam
3/4 tsp. dried Italian seasoning
3/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
4 pork loin rib chops, 1"-thick
1 tbsp. oil
1-1/2 cups strawberries, trimmed, quartered
4 cups baby spinach

In bowl, whisk together broth, vinegar and strawberry jam. Reserve.

In a small bowl, combine Italian seasoning, garlic powder, salt and pepper. Rub over chops. In a large skillet, heat oil over medium-high heat. Add chops, cook, turning once, until no longer pink, about 7 minutes per side. Transfer chops to plate.

Cover with foil to keep warm. To same skillet over med-high heat, add reserved broth mix. Bring to boil, cook, stirring occasionally until thickened, 4-5 minutes. Remove from heat, stir in strawberries.

Arrange spinach over serving platter, top with pork chops. Pour strawberry mix over chops.

It's a very easy recipe to follow. I added some pepperino to the sauce to give it a little kick & sweetened it a bit further. Excellent! perfect compliment the pork chop :-)

Used 1/8 cup ea of white distilled and dark balsamic vinegar. It didn't taste nearly as weird as it sounds. Cool little something different. The amount of dry seasoning barely covered two sides of two chops. I would double the amounts if you have four. My chops were kinda thin (dollar tree) and I ended up reducing time and temperature on chops. Watch the pan carefully if you have thin dollar tree chops. I don't know how many stars to rate "something different" but my roommate loved it and gives it 4/5 stars
