CATFISH STEW 
10 lbs. fileted catfish
3 1/2-4 lbs. potatoes
2 1/2 lbs. onions
1/2 lb. bacon
McCormick's Season-all salt
Salt and pepper
8 oz. water

Use a 12 quart pot. Put bacon in pot and fry. Remove the bacon, leave the grease in the pot. Let the grease cool a little. Add a layer of potatoes which have been sliced into about 1/4 inch slices.

Follow with a layer of catfish. Next add layer of onions, which have also been sliced, crumble bacon, salt and pepper and season salt. Repeat layer until all ingredients have been used.

Pour in 8 ounces water. Cover with lid and cook on low heat until flavors have blended and all ingredients are done.

Rather than bacon I used fat back. Also I layered tomatoes along with everything else, put enough water to just cover the top of everything, added a few red peppers, brought all to a boil then covered and reduced to simmer for about 45 minutes. Delicious.
