“OATMEAL RAISIN COOKIES” IS IN:

OATMEAL RAISIN COOKIES 
1 cup (2 sticks) butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 cups oatmeal
1 cup raisins
1 cup flaked coconut
1 cup chopped walnuts

Preheat oven to 350°F.

Beat together butter and sugars until creamy. Add eggs and vanilla. Beat well.

Add combined flour, baking soda, cinnamon and salt. Mix well. Stir in oats, raisins, coconut and nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Bake 10 to 12 minutes or until golden brown.

Cool 1 minute on cookie sheet then remove to wire rack.

I substituted margarine for the butter and added a half cup of peanut butter because I love peanut butter and used Splenda for the sugars (Splenda now has a brown sugar variety) to make these an almost sugar free cookie!

These are amazing!!! The flavor is epic! Oatmeal raisin cookies are either wonderful (as in this recipe) or dry and flavorless. This recipe is a keeper. I've been making them for years and wanted to print a fresh copy and thought I'd submit a review.
