OAT & WHEAT BRAN MUFFINS 
1 c. 100% oat bran
1 c. 100% wheat bran
2 tsp. baking powder or 4 tsp low-sodium baking powder
1 1/2 tsp. apple pie spice
1 c. skim milk
2-3 tbsp. oil
1/3 c. honey
2 egg whites
1/2 c. applesauce
1 ripe banana, mashed
1 c. raisins

Mix 100% oat bran and wheat bran, baking powder, and spice together and set aside. Mix milk, oil, honey, egg whites together; beat with wire whisk until fluffy; add apple spice and banana and add to dry ingredients. Mix only until bran mixture is moist. Add raisins and spoon into muffin cups. Makes 12. Bake 17-18 minutes in a 425 degree oven. These are moist and delicious.

These muffins were great! I'm always looking for healthier recipes and love using wheat/oat bran. I didn't use rasins and added walnuts though. I will be making these a lot!

This recipe was easy and made tasty filling muffins. The perfect blend of soluble and insoluble fiber and no flour. The only changes I made was to use whole eggs and cinnamon instead of apple pie spice (just because I didn't have any). Will definitely make these again. Thank you for posting this recipe!
