SIMON AND GARFUNKEL OMELETTE 
Enjoy on your way to the Fair!

3 eggs, beaten with a fork or whisk
1 tbsp. butter or olive oil
1/2 tsp. parsley
1/2 tsp. sage
1/2 tsp. rosemary
1/2 tsp. thyme
salt and pepper to taste
1 oz. cheddar cheese

Turn stove on to medium heat. Place butter or olive oil in a pan to warm. Meanwhile, crack and beat three eggs in a small bowl. Add parsley, sage, rosemary, and thyme, remembering a true love of yours as you do so. Stir the egg and seasoning mixture.

Add seasoned eggs to the pan. Cook eggs for one minute. Add cheddar cheese, salt, and pepper, fold the eggs over to make an omelette, cook for another minute until eggs are solid and the cheese is melted.

Serve warm with toast.
