SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach
2 c. herb seasoned dressing crumbs
1 c. grated Parmesan cheese
6 eggs, slightly beaten
3/4 c. soft butter
Salt & pepper to taste

Cook spinach according to package directions and drain. Combine remaining ingredients with spinach and mix well. Roll into bite-size balls (about walnut size). Bake on ungreased cookie sheet at 350 degrees for 10 minutes. Makes about 50 balls.

(May be made ahead and frozen unbaked up to 3 months. Bring to room temperature and bake.) NOTE: This is meant to be an hors d'oeuvres recipe but it can also be made as a vegetable dish by making the balls larger and baking them slightly longer.
