GREAT MEAT LOAF 
1-1/2 lb. lean ground chuck
1/2 lb. mild pork sausage
1 egg, beaten
1 (5 oz.) can evaporated milk
1 medium onion, chopped
1 small bell pepper, chopped
2 tbsp. Worcestershire sauce
1 tsp. seasoned salt
1/2 tsp. coarse ground black pepper
oatmeal or bread crumbs
ketchup

Preheat oven to 350°F.

Allow beef and sausage to come to room temperature. Combine first 9 ingredients in large bowl and mix thoroughly. If mixture is loose add 1 to 2 heaping tablespoons oatmeal or bread crumbs and mix again. Do not add too much as it will cause the meatloaf to be dry.

Put into loaf shaped pan and bake uncovered 45 minutes. Pour excess fat off and return to oven for 30 minutes. Pour off fat again and top loaf with ketchup. Bake another 10 to 15 minutes. Pour off final fat and let rest 15 minutes before slicing.

Total baking time should be 60 to 90 minutes.

Thank U Frances Cain...GREAT RECIPE... Simple, yet complete...I also added fresh, sliced mushrooms & baby carrots around the edge, in the last 30 minutes or so... Plus a lb of Elk Burger in "the mix"... oh, and home, grown white garlic pieces...
