COMPANY BEANS AND RICE 
1 onion, chopped
1 to 2 cloves garlic, crushed
2 tbsp. oil
2 tomatoes, chopped
1 zucchini, chopped
1/2 tsp. oregano
1 lb. can beans (kidney, pink, garbanzo, etc.) drained
3 to 4 c. cooked rice
1 c. shredded cheese

Saute' onion and garlic in oil until soft. Add tomatoes, zucchini and oregano. Cover, simmer 5 minutes. Add beans. Simmer 5 minutes. Add salt and pepper. Pour over rice and cover with cheese.
